As an Acrobat you can use your Athletics and Acrobatics as well as you Stealth skill and Illusion. To make stealing a more challenging part of the game, use only Hand to Hand combat but do not kill anybody (since Acrobats are not murderers. Of course you could roleplay an Acrobat who murders people) so Hand to Hand is only for self-defense. Maybe pretend that you were caught by someone so you wrestled with them and they fell on their paper knife, then do things like jump from roof to roof in an attempt to escape the law.
When roleplaying an acrobat you are obviously going to need a high acrobatics skill. Use the tips on the Increasing Skills and Acrobatics pages to maximize it as quickly as possible.
